@everythingerica inspired me to make protein-packed pancakes on my half day. I modified her recipe and used part-skim ricotta, almond meal, eggs, milk, and a hint of lemon zest to make my pancakes. Topped with a little powdered sugar, and a fresh persimmon. Paired with an 8 ounce glass of milk this breakfast has 25g of protein!
