Blueberry and Almond Overnight Oats with a Hard-Boiled Egg and Latte

Liven up a classic overnight oats recipe by topping with fresh blueberries and almonds in the morning. Pair with a large hard-boiled egg on the side. And, who said coffee shops can only make lattes? Enjoy your breakfast with a homemade latte made with 8 ounces of milk to reach 26 grams of protein.

Directions

In a mixing bowl, combine 1/2 cup milk and 1/4 teaspoon vanilla extract. Mix in 1/3 cup oats and refrigerate overnight. In the morning, top oats with 1/4 cup fresh blueberries and 2 tablespoons of sliced almonds. Peel hard-boiled egg and slice, if desired, and serve on the side. Steam remaining 1 cup milk. Pour into a cup and add brewed espresso. Spoon a thin layer of foamed milk over the latte.

1 - hardboiled egg

1 cup - fat free milk

2 shots - espresso*

*can substitute 1/2 cup strong brewed coffee
